Schezwan Dumplings: A Spicy Twist on a Classic Dish

Dumplings are a staple in many Asian cuisines, and it's no wonder why. These little parcels of joy are filled with flavour and are perfect for any occasion. Schezwan Dumplings are a spicy twist on the classic dumpling, filled with a savoury pork and vegetable filling and topped with a spicy schezwan sauce. They're perfect as an appetizer or as a meal on their own.

Here's how to make Schezwan Dumplings at home:

For the Dumpling Filling:

- 1/2 lb ground pork

- 1/2 cup finely chopped cabbage

- 1/4 cup finely chopped scallions

- 1 tbsp soy sauce

- 1 tbsp sesame oil

- 1 tbsp cornstarch

- 1/4 tsp ground black pepper

- 1/2 tsp salt

- 2 cloves garlic, minced

- 2 tsp ginger, minced

For the Dumpling Wrapper:

- 2 cups all-purpose flour

- 3/4 cup warm water

For the Schezwan Sauce:

- 2 tbsp soy sauce

- 2 tbsp rice vinegar

- 2 tbsp schezwan sauce

- 1 tbsp honey

- 1 tbsp sesame oil

- 2 cloves garlic, minced

- 1/2 tsp grated ginger

Instructions:

1. In a large mixing bowl, mix all the ingredients for the dumpling filling together until well combined.

2. In a separate bowl, mix the flour and warm water together until it forms a smooth dough. Knead the dough for a few minutes until it becomes elastic.

3. Cover the dough and let it rest for at least 30 minutes.

4. Roll out the dough into thin strips and cut them into small circles using a cookie cutter or the rim of a glass.

5. Place a small amount of filling in the center of each circle and fold the edges together to form a dumpling. Make sure to seal the edges tightly.

6. Bring a large pot of water to a boil. Add the dumplings to the pot in batches, making sure not to overcrowd the pot. Boil for 4-5 minutes or until the dumplings float to the top.

7. While the dumplings are cooking, make the schezwan sauce. Mix the soy sauce, rice vinegar, schezwan sauce, honey, sesame oil, garlic, and ginger together in a bowl.

8. Serve the dumplings hot with the schezwan sauce on the side for dipping.

Schezwan Dumplings are perfect for adding a spicy kick to your meal. The combination of the savoury pork filling and the spicy schezwan sauce is sure to tantalize your taste buds. They're also a great party food and can be made ahead of time and then cooked right before serving.
